Featured Recipe from The Little Paris Kitchen: Canard à l’Orangina (Duck with fizzy orange)

Serves 4 as a main

When I was invited to a dinner hosted by Chef Jean-François Piège, he described how his previous elaborate style of cooking at the Hôtel de Crillon had evolved into something a lot more simple and homely at his current restaurant in the Hôtel Thoumieux. He told an amusing story of how his wife wanted duck à l’orange for Sunday supper and all he could find at his local corner shop was Orangina, so he used it to make a sauce for the duck. I’m not sure exactly how he made his canard à l’Orangina, but here’s my version. A simple watercress or wild arugula salad works well with this dish.

For the Marinade:
  • finely grated zest and juice of 1 orange
  • 1 tbsp olive oil
  • ½ tsp ground cumin
  • 1 tsp salt
To Make the Marinade

Mix together the orange zest and juice with the olive oil, cumin, and salt.

The Duck
  • 4 duck legs
  • 7 tbsp orange soda
  • 2 tbsp Cointreau
  • a pinch of salt
  • 1 tsp red wine vinegar
  • 4 oranges, cut into segments

Rub the marinade over the duck legs and leave to marinate for a minimum of an hour (or in the fridge overnight).

Preheat the oven to 325°F. Put the duck legs with the marinade into a roasting pan and cook for 1 hour or until tender. Halfway through cooking, baste the duck with some of the pan juices.

Fifteen minutes before serving, pour the orange soda and Cointreau into a large frying pan, place on a high heat, and simmer until reduced by half. Stir in the salt and vinegar before adding the orange segments. Simmer for another 5 minutes.

Serve the duck legs hot, with the orange segments and sauce.

Preparation time: 20 minutes

Resting time: 1 hour–overnight

Cooking time: 1 hour

A must have for cooks but buy the UK edition

I've made many recipes including the chouquettes (choux pastry puffs), cheese and potato nests, egg in ramekins, lavender chicken, and cherry compote French toast, all of which will now be recipe staples. They were simple to make yet really impressive looking and tasty. This is my first cookbook by her, but I'm certain I'll buy her others. There are a lot of unique recipes I want to try and I appreciate the section in the back dedicated to staple recipes for chicken stock, mayonnaise, and vinegarettes, which every cook should learn. Her book has a combination of beginner and intermediate recipes, so new or seasoned cooks should find something appealing. The TV series that accompanied this book is equally delightful. Some French ingredients may be hard to find, but she gives substitutes, which may be easier to find.

Buy a digital scale for the dessert recipes in the UK edition. I own both the US and UK editions and the original version is much better. The recipes turn out much better when the ingredients are measured by weight rather than volume.

A great introduction to French food

I fell in love with Rachel's quirky and energetic personality when I saw an episode of her show on the cooking channel. I had to find a cookbook of hers after watching her cook lavender honey chicken in her quaint kitchen.

This feels like a great introduction to French food. There are easy recipes in here that show people French cooking isn't difficult like many stereotypes present otherwise. The lavender honey chicken recipe that I saw on T.V. was in here and it is quite simple.

This also had intermediate and advanced recipes for those who are not intimidated and/or have a higher skill level when it comes to cooking. There are recipes for profiteroles, custards, poached fruit etc.

I love that Khoo puts her own spin on some classic French dishes. She uses her English roots and Austrian background in some of her dishes as inspiration to reinvent classical dishes.

My only complaint is how the book is broken down. Rather than being broken down into meals or categories like meat, poultry, dessert etc. the book is broken down into sections like picnic food, snacks, cooking for company etc. All the sweet and savory dishes are mixed together making it harder to find a dish. I have to flip to the back to find a recipe in the glossary. I've made a little list on a post it note with dishes I want to try according to their "meal" category, like appetizer, dinner, dessert etc. so it's easier to find a recipe.

Overall, this is a lovely cookbook though!

Good starter for those new to French cooking or even cooking

I really have enjoyed learning from this little Kindle book. Simple recipes. I love using a scale for cooking I think weight is more accurate than spoonfuls so I look for recipes that use weight. The Kindle edition is in spoonfuls and cups.. I made the chicken dumplings (Quenelles) with soup, the husband loved them, I think I will like them more with the white sauce (bechamel) and cheese. The chouquettes were yummy (I bought the pearl sugar here on Amazon). The madeleines are amazing (I bought the tin here on Amazon) These is a cheese recipe that everyone can make quickly, it's scrumptious. There are a lot of basic sauces and dishes. I'm very rural and landlocked so fresh seafood isn't always an option It's a nice little book with lovely photo's. I have all 6 of her tv shows on my dvr and use them in addition. If I had the chance to live in a tiny, tiny little apartment in the nice part of downtown Paris for a season, I'd be on the next plane out! These are more approachable than some of Laura Calder's although I love her work as well. For instance, baguettes brushed with extra virgin olive oil sprinkled with grated chocolate and toasted in the oven. Tasty and easy. This isn't low fat so be ready to ramp up the exercise. Good starter on French Food.
